Hello B-U-M Babes, here we are the week after Thanksgiving and you may still be eating those left overs!!! Can I just say I am one and done when it comes to all those holiday foods! Its time to more on, you have permission to throw out or give away your left overs to a needy family. Don’t let the holidays derail all the progress you have made on your health journey.
Hey, do you remember the old days, those days before you discovered how to eat for your health and not just because something tasted good or was a drive-thru pick-up to save time? I sure do. Especially around the holidays. That was my free time and I sure did go wild! After all, it’s that time of the year when you get all the sweets and fatting foods you could ever possibly want all in one place! And can tell you that I always indulging way too much. I bet you are with me, right? Heck you may still be there and that’s ok. We all have to find our way that drives us to change hour health.
Since becoming a nutrition coach I have learned so much about food and how not all food is made the same. But that’s a teaching I will do later for all of you. What I want to tell you today is that eating healthy is not hard work, nor is it spending long hours in the kitchen. It can be as hard as you make it or as easy as you want it to be. As humans, we tend to want to follow someone else lead when it comes to how they lost weight and that includes eating exactly how they eat. But we are all different and while we may lose weight eating the same thing as someone else, the question you have to ask yourself is, did you like the foods and could you make that way of eating a lifelong thing? If you said no to either of those then getting a nutrition coach, such as myself, can help you in so many ways.
A nutrition coach can help you understand how foods are different and how they react in the body to produce energy or create disease. They can help you determine what macro split is right for you and the stage of life you are in and they can teach you what macros are and why they matter to being healthy. Especially as a woman who may be in peri-menopause. I can tell you I had no idea how important eating the right type of food was until I became a coach. I don’t think I would have been able to sustain my daily routine as a personal trainer and fitness instructor without proper nourishment over the last 3 years of peri-menopause. It has been a tough road and I am hopeful the journey is almost over.
My journey with learning how to eat for optimal health is just one of the reasons I want to make sure I bring you recipes you can create in record time that are healthy.
This recipe can be used as a base to create some savory dishes or eat as is and enjoy. To make it vegan replace the chicken with tofu and enjoy.
Chicken, Jasmine, Black Beans, Avocado and Salsa
Ingredients
- 4 ozs Chicken Thigh boneless and skinless
- ½ cup Jasmine Rice
- ½ cup Black Beans
- ½ Avocado
- 4 tbsp Black Bean and Corn Salsa
Instructions
- Grill or bake the chicken thighs to your liking, add on top of the jasmine rice, black beans, and avocado, and then top it all with the salsa of your choice. Enjoy
