Quick, Easy, Gluten and Dairy free Protein Pancakes


Just imagine for a moment, you open your eyes and all of a sudden you smell this amazing smell! What is that, you ask. Still in your sleepy state you think, has someone opened a bakery close to me? And then you realize your significant other is not in the bed beside you. You roll out of bed and put on your pj’s to go see what that smell is. You make your way down the hall as if you were being lead by the pied piper, it’s not, they just smell that good! You round the corner into the kitchen and there stands the love of your life cooking. “What is that amazing smell babe?” You ask. In her sweet little voice she replies, “Breakfast for my love.” Ok ok, you get it they smell good and can transport you into this moving scene I seem to have fallen in! Sometimes I get carried away with story telling, however if your still reading It must be great!! How about we get on with the recipe so you can test it out on your loved one.

Does your family love pancakes? My husband and I both love good pancakes and waffles and Sunday’s are our day that we will cook and have breakfast together. A few years ago I found out that I do have a bit of sensitivity to gluten and dairy so I try to live at least 98 percent free. I tried at least 10 different recipes and they did not have the consistency or the taste I wanted so I set out to create my very own. And we all know when you come up with something good you have to share it with the world.

Quick and Easy Gluten and Dairy Free Protein Pancakes

Ingredients
  

  • 8 tbsp King Aurthur gluten free flour
  • 2 scoop Faster Way grass fed or pea protein – vanilla *Order link in notes
  • 1-1.5 tsp vanilla flavor
  • ¼ tsp baking soda
  • ¼ tsp salt
  • ½ cup almond milk or choice of non-dairy milk
  • 1 egg

Instructions
 

  • Mix all ingredients well, spray your pan or waffle iron with coconut oil or avocado oil, pre-heat your pan then spoon into pan dividing into 4 equally sized pancakes.
    If using a waffle iron heat the iron, after spraying, for 3 minutes, for softer waffles cook 2 minutes then open, for more crisp waffles cook 2 and 30 seconds or longer depending on how crisp you want your waffles
